Hello hello! I hope you all had great weekends! Mine was productive and fun! I was able to tackle A LOT of Spring cleaning and also spend some quality time with friends. I was even grateful to work yesterday because I have an event on Wednesday so I was able to cross a lot of prep work off my list - win! Productivity at its finest. Here are my sunniest moments of the weekend:

We kicked off Friday night celebrating Andres' birthday at Loco. Man, it lives up to the hype. The drinks are perfection, the food is crazy delicious, and the atmosphere is energetic! We had a BLAST and not just because we were drinking tequila - the company was superb :)

On Saturday, I made a mean stack of gluten-free, blueberry pancakes...

... Went to the gym and took a sweaty gym selfie after.

Cleaned my condo until it was spotless and put together a bag of about 20 pairs of shoes to donate...

Then, had the girls over and served the essentials: Cheese and Prosecco.

On Sunday, I worked and then went home to make Italian Spiralized Zoodles again. Except, this time I used organic chicken sausage instead of a fried egg. I must say, it was pretty fantastic.
