Weekend Sunshine_7.1.13

This past weekend kicked off with a much-needed girls night. We all missed Kim, but we all gushed about her bundle of joy... the new little lady in our life, Juliet.    Saturday, I was surprised with tickets to Tim McGraw - he is such a exciting performer and we got a special treat with an acoustic performance right before the main show started.  It was incredible and SO much fun.  All in all, it was a great weekend - too short though, don't you all feel that way? I wish I could just press pause!

My absolute favorite place to get an ice cream cone is Peaceful Meadows farm. If you are ever visiting Plymouth, MA, go get one. (there are also locations in Middleboro & Whitman) . Get the cappuccino chunk. Runners up are peppermint patti and coconut chocolate almond.

Finally, whenever I have a case of the Mondays (like today). I always feel 100% better after my Monday night boxing class.   It never fails. Remember, the mental benefits of working out are just as important as the physical benefits. What is your favorite workout to tackle after a long day?

Balsamic Chicken & Quinoa

I have a confession to make: Quinoa boressss the life out of me. It is so boring. Why eat quinoa when you can eat whole wheat pasta or rice? Oh, because it is one of the most protein-rich foods on the planet, has twice the fiber as most grains, tons of iron, and ya know lysine, magnesium, riboflavin... sigh, it is so freaking healthy. It is fuel. It would be wrong for me to ignore its benefits and not make it.

Tonight, I succeeded in giving it a little kick! (goat cheese cures all!)

Marinate organic chicken tenderloins or breasts in balsamic vinegar, salt, extra virgin o/o, thyme, & crushed red pepper.

Toss chicken on grill or grill pan along with asparagus that has been seasoned with extra virgin & salt.

Grill up some shallots (red onion is fine). In a separate bowl, mix together quinoa, chopped asparagus, tbs of crumbled goat cheese, grilled shallots, & salt.

Prepare on plate and enjoy that protein!  The goat cheese and grilled shallots really give the quinoa an abundance of flavor. Mixing in the asparagus gave it a nice crunch. Balsamic chicken is so easy and delish.
