Hi friends! Is it already almost Wednesday? This week is flying and this post is QUICCKKKKK! The weekend was lovely and was mostly spent celebrating my mom's bday. Lots of fun for sure - let's get right to it, shall we? Three words per picture!

15 Minute Meals: Buffalo Chickpea Roll-Ups

Happy Friday! No Friday Favs today but, I have a recipe. That cool? I'm back with another edition of "15 Minute Meals". What I like about this one in particular is it's perfect for when there's nothing in the kitchen besides a can of chickpeas and some veggies. Also, this one will make my vegetarian friends happy! 

First, rinse a can of chickpeas, throw them on a sheet pan with evoo and salt and put in a 425 degree oven for 15 minutes (you could cook them longer for crispier chickpeas). While they cook - chop veggies. Last week, I went with red pepper, tomatoes, cucumber, and iceberg lettuce.

Toss a couple of corn tortillas on the stove to heat them up. If you want a little cheese... add it right on top to get it melty. We had some extra sharp pepperjack lying around from the weekend. It just made sense to add it, amiright? 

Toss the toasted chickpeas in buffalo sauce. Then, mix all of the ingredients togther (and some feta) and place on the heated tortillas. A convenient tip: use iceberg lettuce and cut into cups so that all of the ingreients stay together. Or, you could simply do lettuce wraps instead of roll-ups. My recipes are flexible, you know?

Weekend Sunshine XLIII

Hi friends and how are ya? Can someone please explain to me how it's November 9th already? I could have sworn it was just August. I don't know if life just moves at the speed of lightning or if it's the unseasonably, awesome, warm weather or what but, I keep forgetting it's November. Forreal.

Moving on, the weekend was good. I did work both days, but, there was some relaxation involved. PLUS, I got to see Mandy and Kiley on Saturday night which was so great and LONG OVERDUE. I don't have too many photos, but, here are my sunniest moments! I hope whatever you did left you feeling happy, fulfilled, relaxed, and rejuvenated!

I had been eyeing this Califia Farms Spiced Cranberry Cocktail at Whole Foods and finally bought it on Friday. This drink is light, refreshing, and feels very "holiday".
- 1 shot vodka
- La Croix lime seltzer
- 1 shot of Califia Farms Spiced Cranberry Cocktail
- Sprig of fresh rosemary and a few cranberries

At work on Saturday, I had an event (Touch-a-Truck) where approximately 1,200 people showed up, including these three who made my whole day! After the event, I got lunch with my parents, sister, brother in law, and the kids. It was really nice!

Fast forward to a few hours later when I met up with these two at Tavern Road. Gab gab gab... we had so much to catch up on and it was SO GOOD to see them. I wished they lived closer.
